Curried Spinach

2tbsp oil

½ tsp cumin seeds

4 dried red chillies

2 onions , chopped

1tsp Garlic paste

¼ tsp turmeric

½ ground coriander

1 bunch coriander

350g spinach

3 green chilies


For the tempering

1 tbsp oil

½ tsp cumin seeds

1 tsp mustard seeds

8 curry leaves


Heat the 2 tbsp oil in a large pan over medium heat, add the cumin seeds and dried chilli and fry for 1 min.

Add the onion and fry for 10 mins , add garlic paste, turmeric and ground coriander and fry for 30 secs, Add the fresh coriander, spinach and green chilies,then season with salt. Reduce heat to low and cook for about 5 mins. Mash the leaves a little.

Heat oil in small frying pan , add cumin, mustard seeds and curry leaves, fry for 1 min then pour over the spinach.
