Nihari (Breakfast Meat Curry)

A famous Delhi meat curry eaten for breakfast after the first Muslim prayers.

800g Lamb on bone diced ( I used Ox tail here)

2 tbsp garlic and ginger paste

1 tsp hit red chilli powder

1 tsp Coriander Powder

1 tsp turmeric

1 tsp ground fennel seeds

2 tbsp ghee

4 cloves

1 cinnamon stick

Seeds of 3 black cardamom pods crushed

½ tsp black pepper

2 onion sliced

2 tbsp Atta flour mixed with water to a paste

Juice of ½ of lemon

Mix meat with half the ginger and garlic paste and all the ground spices in a saucepan , cover the meat with water, season with salt and simmer for 1 hour or until meat is tender.

Heat ghee in separate pan ,add whole spices , crushed cardamom seeds and pepper fry 30 sec's. Add onions and fry for 15 mins , add rest of ginger and garlic paste then add the meat and all the stock. Stir in flour paste stir well. Cook for 5 mins then add lemon juice and season to taste.
