My Red Chilli Lamb

Red Chilli Lamb 🌶️🌶️🌶️

1kg Lamb on the bone

15 Kashmir dried red chillies soaked in enough water to cover.

1tsp turmeric,

2 tsp Cumin, Coriander Powder, Kashmir red chilli powder

1tsp mango powder

1½tsp salt

2tsp sweet paprika

1tsp dried Methi

Add all of the above in to a blender Inc the water from chillies and blend smooth adding more water if needed. Pour over the lamb ,mix well and leave.

Slice 2 large onions and fry in 3 tbsp of Ghee ,add 2 tsp Garlic and ginger paste and fry until the onions are golden brown. Very important to get the onions golden.drain the onions but saving the ghee,

Place onions in blender and blend until smooth and put to one side.

Add a 1 inch bit if cinnamon stick ,4 green cardamom ,2 black cardamom fry for 2 mins.

Add 1 tin of chopped tomatoes and cook on a med heat for 10 mins. Add ½tsp turmeric ,1tsp Coriander Powder ,1 tsp Cumin. Cook 1 min. Add onion mixture stir well then add the meat. Cover and cook on low for 2 hours adding water if needed. Add salt to taste
