Mushroom Curry

Mushroom curry

500g large Mushrooms

2 leeks ,white only chopped

2tbps Ghee

2 garlic cloves chopped

½ tsp grated ginger

6 curry leaves

2tsp curry powder

1tsp salt

½tsp Garam Masala

125ml coconut milk

2tsp lemon juice


Chop mushroom into quarters

Heat Ghee , add garlic, ginger, curry leaves,and leeks and cook until soft but not brown. Add curry powder ,salt and mushrooms and stir over a low heat until soft. Sprinkle with Garam Masala ,add coconut milk and cook uncovered just until heated through. Remove from heat add lemon juice and serve.
