Half leg a lamb and fat removed

4 tbsp of garlic and ginger paste

Rind half lemon

4 tbsp lemon juice

1tsp Cumin seeds

6 cardamom pods seeded

½ tsp ground cloves

½ tsp turmeric

1 tsp chilli powder

½ tbsp salt

150g yogurt

50g whole unpeeled Almonds

2 tbsp brown sugar

1tsp saffron threads ,soaked in boiling water.

Prick lamb all over with a fork and make 6 deep cuts

Mix garlic and ginger paste , lemon rind and juice,spices in a bowl. Spread over the lamb leave for 1 hour.

Mix yogurt with Almonds and half the sugar , pour over lamb , cover tightly and leave for 2 hours or longer.

Sprinkle over sugar and cook in a oven on 220c /425f/gas 7

For 30mins uncovered. Now turn heat down to 160/325/3 cover and cook for 3 hours basting occasionally. Sprinkle saffron water over the lamb and cook for 30mins or until very tender.
